Method

  1. Char ginger and onion over open flame; toast spices.
  2. Simmer bones, aromatics, and spices for 4 hours; season with fish sauce and rock sugar.
  3. Cook rice noodles separately and place in bowls.
  4. Top with raw sirloin and ladle boiling broth over to cook; serve with herbs and chili.
