Fettuccine Alfredo

Silky homemade fettuccine in a true Roman Alfredo of butter, parmigiano, and pasta water.

Method

  1. Boil fettuccine in salted water until just shy of al dente.
  2. Melt butter slowly in a wide pan; do not brown.
  3. Add pasta to the butter with a generous splash of pasta water.
  4. Toss in parmigiano off heat until creamy; finish with white pepper and nutmeg.
