Method

  1. Render the guanciale in a dry pan until crisp; reserve the fat.
  2. Whisk eggs, pecorino, parmigiano, and black pepper in a bowl.
  3. Boil spaghetti in salted water until al dente, reserving 1 cup pasta water.
  4. Off heat, toss pasta with guanciale, then with the egg mixture and a splash of pasta water until creamy.
