Penne Arrabbiata

A fiery Roman tomato sauce with garlic, calabrian chili, and bright olive oil tossed with penne and parsley.

Method

  1. Warm olive oil with sliced garlic and chili until just fragrant.
  2. Crush tomatoes by hand and simmer 15 minutes with salt.
  3. Cook penne to al dente and drain, saving 1/2 cup pasta water.
  4. Toss penne with sauce, splash of pasta water, and shower of pecorino and parsley.
