Method

  1. Halve the tomatoes and slice the peppers into wide strips.
  2. Arrange on a tray with garlic, olive oil, salt, and pepper.
  3. Roast at 190C for 30 minutes until soft and lightly charred.
  4. Scatter with fresh basil and serve warm or at room temperature.
