Method

  1. Roast potatoes with oil, salt, and paprika in a 425F oven for 20 minutes.
  2. Brown sausage in a cast iron skillet, then add peppers and onion until soft.
  3. Add the roasted potatoes to the skillet and stir to combine.
  4. Crack eggs over the top, scatter cheddar, and bake 7-9 minutes until eggs are just set.
