Method

  1. Heat cream with vanilla; off heat, steep 10 minutes.
  2. Whisk yolks with sugar; slowly temper in the cream.
  3. Bake in a water bath at 325F until just set.
  4. Chill, sprinkle sugar, and torch until amber.
