Espresso-soaked ladyfingers layered with mascarpone cream and dusted with cocoa.

Method

  1. Whisk yolks and sugar over a bain-marie until pale.
  2. Fold mascarpone into the yolks; whip whites separately and fold in.
  3. Dip ladyfingers in espresso and rum, then layer with cream.
  4. Chill 4 hours and dust with cocoa before serving.
