Roast Lemon Chicken with Vegetables

Method

  1. Heat the oven to 200C / 400F and arrange the vegetables in a roasting tin.
  2. Set the chicken on top, drizzle with oil, and add lemon, rosemary, salt, and pepper.
  3. Roast for 40 minutes until the chicken is cooked through.
  4. Rest for a few minutes, then serve with the pan vegetables.
