Method

  1. Heat the oven to 200C / 400F and rinse the quinoa well.
  2. Toss the pepper, zucchini, and tomatoes with oil, salt, and pepper, then roast 20 minutes.
  3. Simmer the quinoa in two cups of water for 15 minutes until fluffy.
  4. Combine, fold in the parsley and a squeeze of lemon, and serve.
